This homemade chocolate pistachio fudge could be an ideal Diwali gift

Last week we went to a friend’s home for lunch and while we usually take a box of chocolates or a wine, I remembered their daughter had loved the chocolate fudge when she was at our home so I decided that’s exactly what I am going to make.
This is one of my favourite ‘to gift’ and ‘to-go’ food recipe. These little chocolate pistachio fudge bites need no special effort in cooking. They are very soft and very very fudgy (even when eaten directly from the freezer).
Chocolate pistachio Fudge
Preparation time: 05 mins | Cooking time: 25 mins (+freezing time) | Makes 50-60 pieces
Ingredients
2 bars of 160gms dark chocolate, broken into pieces
1 can of Sweetened Condensed milk (~300gms)
2 tbsps of unsalted butter
20-25 pistachios (unsalted)
Method
* Put the chocolate, condensed milk and butter in a heavy-based pan on a low heat, and stir to melt.
* Peel the pistachios and put them in a freezer bag. Bash them with a rolling pin, to break into big and little pieces.
* Add the nuts to the melted chocolate and condensed milk and stir well to mix.
* Pour this mixture into a foil tray, smoothing the top.
* Let the fudge cool, and refrigerate until set. You can then cut it into small pieces and then pack them in boxes to gift or keep them in the freezer — no need to thaw, you can simply pick one and gobble them straight out of the freezer.
Food is never just food. I believe it’s story telling, it’s conversation. It brings people together and it speaks a universal language! I love to play around in my kitchen. The thrill of being able to create something new and sharing it with others is what fuels my passion for cooking. The fact that dear husband is a foodie and an honest critique helps!
